The Pridwin Hotel is very happy to welcome our new Chef de Cuisine Lee Knoeppel. Chef Lee combines a long-time family connection on Shelter Island with culinary skills trained and advanced in New York City, which gives him the unique advantage of knowing intimately the Shelter Island terroir as well as the sophisticated palate of New Yorkers.
Chef Lee graduated from the Institute of Culinary Education in Manhattan and in addition to restaurant work in the city recently worked as the Sous Chef on the Food Network’s “24-Hour Restaurant Battle” and “Secrets of a Restaurant Chef.”
When asked to summarize his goal for this summer at the Pridwin, he said, “This summer I’d like to focus on fresh, local, sustainable food. I am very excited to bring my style of bright colors, and big flavor to the Pridwin. I’m looking forward to a great summer.”
The Pridwin restaurant is open to both hotel guests and the public from Sunday, June 26 until Labor Day weekend for breakfast, lunch and dinner. The dinner menu varies daily with a focus on local fare. The wine list as well features exceptional Long Island wines in addition to a broad selection of wines from other countries and regions. The Pridwin has long been associated with the freshest fish on Shelter Island–tuna, mahi-mahi,wahoo, swordfish, fluke, flounder, sea bass, cod, bluefish and other local in-shore and off-shore fish are caught by the owner, Captain Richard Petry and his son, Captain Gregg Petry.
Chef Lee has also developed a bar menu, a selection of seafood specialties and small plates that will complement the creations of our master mixologist, Jean-Pierre Torrealba. More on JP next time!
